Salmon with mandarin orange sauce and mushrooms

Have you ever tried Carousel buffet? It is C's favourite buffet and I have grown to like to. I tried this fish with mandarin orange cream sauce and it was heavenly. It was such a perfect compliment to seafood. Of course, my version could not be compared to hotel's standard. I used fresh milk instead of cream. I have tried cooking salmon with mandarin orange a few times. I realised that we shouldn't cook the juice. It will lose its tanginess. Add the mandarin orange juice only after all the cooking has been done. Add salt or fish sauce and balance to your taste.
